Heritage Turkeys are breeds of turkeys that are recognized to have some characteristics shared with wild/ older turkey breeds. There are several differences between heritage turkeys and their domestic hybrid counterparts (those type that you will find sold in the grocery stores.) A significant difference is their taste. Heritage turkeys have more dark meat (leg meat) in comparison to the white breast meat. The meat is known to have more flavor. Different breeds of heritage turkeys offer different benefits to the meat. Some more breast meat, so better tasting, some different colored skin, etc... Heritage turkeys have the ability to live a normal life and reproduce their own chicks. They are not bound by a certain number of days in which they must be harvested. As with most animals if you spend anytime with them you will notice each has a personality of some sorts.
